Slow Cooker Beef Stew
A hearty and comforting beef stew that was cooked just right in a slow cooker. This is a great dinner for a cold day. Ingredients: 1 5 lbs beef stew meat, cubed 4 carrots, sliced 3 potatoes, diced 1 onion, chopped 2 cloves garlic, minced 1 can 14 5 oz diced tomatoes 4 cups beef broth 1/4 cup all-purpose flour 2 tablespoons tomato paste 1 teaspoon dried thyme 1 teaspoon dried rosemary Salt and pepper to taste Instructions: In a bowl, toss beef cubes with flour until coated Place coated beef, carrots, potatoes, onion, and garlic into the slow cooker Stir in diced tomatoes, beef broth, tomato paste, thyme, rosemary, salt, and pepper Cover and cook on low for 8 hours or high for 4 hours, until beef is tender and vegetables are cooked through
