Easy Gluten-Free Vegan Gingerbread Men

These easy gluten-free vegan gingerbread men are a must-have for Christmas. They are perfectly spiced and have a delightful texture, making them a hit with vegans and non-vegans alike.

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup coconut oil, melted
  • 1/2 cup molasses
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Instructions:

Preheat oven to 350F 175C

In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg

In another bowl, mix coconut oil, molasses, brown sugar, applesauce, and vanilla extract

Gradually add dry ingredients to wet ingredients, stirring until combined

Wrap dough in plastic wrap and refrigerate for 30 minutes

Roll out dough between two sheets of parchment paper until about 1/4 inch thick

Use gingerbread man cookie cutter to cut out shapes and transfer to a baking sheet lined with parchment paper

Bake for 10-12 minutes or until edges are firm

Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely

Decorate as desired with icing or chocolate
