Pineapple Coconut Parfait

A delightful and healthy parfait that combines the tropical flavors of pineapple and coconut with the goodness of non-fat Greek yogurt. The addition of granola adds a satisfying crunch to this no-added-fat dessert.

Ingredients:

  • 1 cup diced pineapple
  • 1 cup shredded coconut
  • 2 cups non-fat Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 cup granola

Instructions:

In a bowl, mix diced pineapple and shredded coconut

In another bowl, combine Greek yogurt, honey, and vanilla extract

Layer the yogurt mixture and pineapple-coconut mixture in parfait glasses

Repeat the layers until the glasses are filled

Top each parfait with a sprinkle of granola

Refrigerate for at least 30 minutes before serving
