Gluten-Free White Cake
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup vegetable oil
- 1 cup buttermilk
- 4 large eggs
- 2 tsp gluten-free baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C
Grease and line two 9-inch round cake pans with parchment paper
In a mixing bowl, cream together the softened butter, granulated sugar, and vegetable oil until light and fluffy
Add the eggs one at a time, mixing well after each addition
Stir in the vanilla extract
In a separate bowl, whisk together the gluten-free all-purpose flour, baking powder, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, starting and ending with the dry ingredients
Mix until just combined
Divide the cake batter evenly between the prepared pans and smooth the tops
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean
Remove the cakes from the oven and let them cool in the pans for 10 minutes
Then, remove them from the pans and place them on a wire rack to cool completely
Once the cakes are completely cool, you can frost and decorate them as desired
