Turkey Enchiladas

If you have turkey left over from your holiday meal, these enchiladas are a great way to use it up. They are filled with a tasty mix of turkey, cheese, and vegetables, then smothered in enchilada sauce and baked until they are golden brown. A dish that everyone likes and thats great for dinner any night

Ingredients:

  • 2 cups cooked turkey, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour tortillas
  • 2 cups enchilada sauce
  • Sour cream and sliced green onions for garnish

Instructions:

Preheat your oven to 375F 190C

In a large mixing bowl, combine the shredded turkey, 1/2 cup of cheddar cheese, diced onion, diced bell pepper, diced tomatoes, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and black pepper

Mix well

Place a tortilla on a clean surface and spoon a generous amount of the turkey mixture onto the center of the tortilla

Roll it up tightly and place it seam-side down in a greased 9x13-inch baking dish

Repeat with the remaining tortillas and filling

Pour the enchilada sauce evenly over the rolled tortillas in the baking dish

Sprinkle the remaining cheddar cheese on top

Bake in the preheated oven for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly

Serve the turkey enchiladas hot, garnished with sour cream and sliced green onions
