Paleo Frozen-Inspired Spritz Cookies
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup coconut oil, melted
- 1/4 cup maple syrup or honey
- 1 egg
- 1 tsp vanilla extract
- A pinch of salt
- Natural food coloring blue and white
- Paleo-friendly chocolate chips optional
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup or honey, egg, vanilla extract, and a pinch of salt
Mix until you have a smooth cookie dough
Divide the dough into two equal portions
Leave one portion plain and add natural blue food coloring to the other portion until you achieve the desired Frozen-inspired blue color
Fill a cookie press or a piping bag with the blue dough and press cookies onto a parchment-lined baking sheet
Use a snowflake-shaped cookie press for a Frozen theme
Bake in the preheated oven for 8-10 minutes or until the edges turn golden brown
Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the blue cookies are cool, melt the white chocolate chips using a microwave or double boiler
Drizzle the melted white chocolate over the blue cookies to create a snowy effect
Allow the chocolate to set before serving
