Caramel Cashew Ice Cream
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1/4 cup water
- 1/2 cup cashews, chopped
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup caramel sauce
Instructions:
In a saucepan, combine sugar and water over medium heat
Stir until sugar dissolves
Allow the mixture to boil without stirring until it turns a deep amber color, about 5-7 minutes
Remove from heat and slowly stir in the cream until smooth
Be cautious as it may splatter
Return the mixture to low heat if necessary to dissolve any hardened caramel
In a separate bowl, whisk together milk, vanilla extract, and salt
Combine the caramel mixture with the milk mixture and refrigerate until chilled
Pour the mixture into an ice cream maker and churn according to the manufacturers instructions
During the last few minutes of churning, add chopped cashews and drizzle in the caramel sauce
Transfer the churned ice cream into a freezer-safe container and freeze until firm, typically 4-6 hours
Serve and enjoy
