Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup corn kernels
  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup avocado, diced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • Tortilla chips for serving

Instructions:

Mix the shrimp with salt, pepper, chili powder, cumin, and olive oil in a bowl

Get a grill or grill pan hot, but not too hot

The shrimp should be grilled for two to three minutes on each side, or until they turn pink and opaque

Take it off the heat and set it aside

Put the mixed salad greens on a large platter or serving board to serve as the base

Put grilled shrimp, cherry tomatoes, red onion, corn, black beans, cilantro, avocado, and shredded cheddar cheese on top of the greens

Arrange the ingredients in a way that looks good

Put sour cream and salsa in small bowls on the board so that people can dip or drizzle them
