Chile Con Queso Dip
Chile Con Queso Dip is a traditional Tex-Mex appetizer made of melted cheese, spicy peppers, and savory spices. It goes well with tortilla chips or nachos.
Ingredients:
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon butter
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1 jalapeo pepper, diced
- 1/2 cup diced tomatoes
- 1/4 cup milk
- 1 tablespoon all-purpose flour
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
In a saucepan, melt the butter over medium heat
Add the diced onion, bell pepper, and jalapeo pepper
Cook until softened, about 3-4 minutes
Stir in the flour and cook for an additional 1-2 minutes
Gradually whisk in the milk until smooth
Add the shredded cheddar and Monterey Jack cheeses, stirring constantly until melted and smooth
Fold in the diced tomatoes and ground cumin
Season with salt and pepper to taste
Transfer the dip to a serving bowl and serve hot
