Brown Sugar Pancakes with Bacon Maple Butter
Ingredients:
- 1 cup all-purpose flour
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 egg
- 2 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 4 strips of bacon
- 1/4 cup maple syrup
- 2 tablespoons butter
Instructions:
In a mixing bowl, combine the flour, brown sugar, baking powder, baking soda, and salt
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix; its okay if there are a few lumps
Heat a skillet or griddle over medium heat and cook the bacon until crisp
Remove the bacon from the skillet, crumble it, and set it aside
Using the same skillet, pour 1/4 cup of pancake batter for each pancake
Cook until bubbles form on the surface, then flip and cook until golden brown on both sides
In a small saucepan, melt the 2 tablespoons of butter and mix it with the maple syrup
Add the crumbled bacon to the syrup mixture and stir until combined
Serve the pancakes hot with a drizzle of bacon maple butter on top
