Slow Cooker Goulash Soup
A hearty and flavorful goulash soup cooked slowly in a crockpot, perfect for chilly days.
Ingredients:
- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups beef broth
- 1 can 14
- 5 oz diced tomatoes
- 1 tablespoon paprika
- 1 teaspoon caraway seeds
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup tomato paste
- 1 cup uncooked elbow macaroni
Instructions:
In a slow cooker, combine beef stew meat, onion, garlic, red bell pepper, green bell pepper, beef broth, diced tomatoes, paprika, caraway seeds, dried thyme, salt, and pepper
Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender
Stir in tomato paste and uncooked elbow macaroni
Cover and cook for an additional 30 minutes or until macaroni is tender
Adjust seasoning if needed
Serve hot and enjoy
