Homemade Thin Mints
Ingredients:
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 2 cups semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions:
In a bowl, whisk together the flour, cocoa powder, and salt
In another bowl, cream together the softened butter and sugar until light and fluffy
Add the vanilla extract and peppermint extract to the butter-sugar mixture, and mix well
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms
Divide the dough in half and shape each half into a log about 1
5 inches in diameter
Wrap the logs in plastic wrap and refrigerate for at least 1 hour, or until firm
Preheat your oven to 350F 175C
Slice the chilled dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper
Bake for 10-12 minutes, or until the cookies are set
Allow the cookies to cool completely on a wire rack
In a microwave-safe bowl, melt the semi-sweet chocolate chips and vegetable oil in 30-second intervals, stirring until smooth
Dip each cookie into the melted chocolate, coating it completely, and place it back on the parchment paper
Allow the chocolate to set at room temperature or in the refrigerator
Once the chocolate has hardened, your homemade Thin Mints are ready to enjoy
