Classic Welsh Cakes
A traditional Welsh treat is a classic Welsh cake, which is often eaten with a cup of tea. They taste sweet and buttery, and they have currants or raisins all over them. Its easy to make these cute little cakes, which are great for a cozy afternoon snack.
Ingredients:
- 225g self-raising flour
- 110g caster sugar
- 110g unsalted butter
- 1 egg
- A pinch of salt
- A handful of currants or raisins
- A sprinkle of caster sugar for dusting
Instructions:
In a mixing bowl, sift the self-raising flour and add a pinch of salt
Cut the cold unsalted butter into small cubes and rub it into the flour until the mixture resembles breadcrumbs
Stir in the caster sugar and currants or raisins
Beat the egg and add it to the mixture
Mix until a dough forms
Roll out the dough on a floured surface to about 1/2 inch 1 cm thickness
Use a round cutter to cut out Welsh cakes
Heat a griddle or frying pan over medium heat and lightly grease it with butter
Cook the Welsh cakes for about 2-3 minutes on each side, or until they are golden brown and cooked through
Remove from the griddle and sprinkle with caster sugar while still warm
Allow to cool slightly before serving
