Vegetarian Lentil and Vegetable Soup

A hearty and nutritious lentil soup with a medley of vegetables, perfect for a warm and cozy meal.

Ingredients:

  • 1 cup dry green lentils
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can 14 oz diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups spinach, chopped
  • 2 tbsp olive oil

Instructions:

Heat olive oil in a large pot and add the onions, carrots, celery, and garlic

Cook until the vegetables are soft

Tomato dices, thyme, rosemary, cumin, salt, and pepper should all be added

Bring to a boil, then lower the heat and let it cook for 25 to 30 minutes, or until the lentils are soft

Add the chopped spinach and cook for five more minutes

If you need to, change the seasonings and serve hot
