Vegan Salted Caramel Kentucky Butter Cake
Ingredients:
- 1 cup almond milk
- 1 tablespoon apple cider vinegar
- 1 cup vegan butter, softened
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup vegan caramel sauce
- Sea salt, for sprinkling
Instructions:
Preheat oven to 350F 175C
Grease and flour a 9x13-inch baking pan
In a small bowl, combine almond milk and apple cider vinegar
Let it sit for 5 minutes to curdle
In a large mixing bowl, cream together softened vegan butter and granulated sugar until light and fluffy
Beat in the applesauce and vanilla extract until well combined
Gradually add the almond milk mixture, mixing well
In another bowl, sift together flour, baking powder, and salt
Slowly add the dry ingredients to the wet ingredients, mixing until just combined
Pour the batter into the prepared baking pan and spread it evenly
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean
While the cake is still warm, poke holes all over the top using the handle of a wooden spoon
Pour the vegan caramel sauce over the warm cake, allowing it to seep into the holes
Sprinkle with sea salt
Allow the cake to cool completely before serving
Slice and enjoy
