Poblano Salsa Baked Cod
Cooking Poblano Salsa Baked Cod is a tasty seafood dish with soft cod fillets and a spicy poblano salsa on top. The salsa tastes smoky because of the roasted poblano peppers, and it tastes fresh because of the fresh tomato, red onion, garlic, and cilantro. This dish is simple to make and great for a healthy dinner during the week or when you have guests over.
Ingredients:
- 4 cod fillets
- 2 poblano peppers, roasted, peeled, and chopped
- 1 tomato, diced
- 1/2 red onion, diced
- 2 cloves garlic, minced
- 1 lime, juiced
- 2 tablespoons chopped cilantro
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Before you start cooking, heat the oven to 375F 190C
Chop the poblano peppers and put them in a bowl
Add the tomato, red onion, garlic, lime juice, cilantro, salt, and pepper
To make the poblano salsa, mix it well
Cover the cod fillets with olive oil and put them in a baking dish
Add pepper and salt
Place a small amount of the poblano salsa on top of each cod fillet
The fish should be baked in a hot oven for 15 to 20 minutes, or until its fully cooked and flaky when you use a fork
If you want, you can serve it hot with extra cilantro and lime wedges on top
