Manhattan Cod Chowder
A delicious and hearty Manhattan-style chowder made with fresh cod and a flavorful broth, packed with vegetables and aromatic herbs. This recipe is gluten-free, low in calories, and adheres to the paleo diet guidelines, making it a nutritious and satisfying meal option.
Ingredients:
- 1 lb fresh cod fillets, diced
- 4 cups seafood or vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 2 carrots, diced
- 1 red bell pepper, diced
- 1 can 14 oz diced tomatoes
- 1 cup tomato sauce
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Add red bell pepper, celery, carrots, onion, and garlic that have been cut up
It will take about 5 to 7 minutes of sauting until the vegetables are soft
Tomato sauce, dried thyme, dried oregano, salt, and pepper should all be mixed in now
Add sea or vegetable broth and bring to a slow boil
Dice the cod fillets and add them to the pot
Cook for about 5 to 7 minutes, or until the cod is fully cooked
Check the seasoning and make changes if needed
