Almond Meal Pastry
This almond meal pastry is a versatile and delicious base for various desserts. Its gluten-free, vegan, low in fructose, and FODMAP friendly, making it suitable for those with dietary restrictions.
Ingredients:
- 2 cups almond meal
- 1/4 cup maple syrup
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions:
Preheat the oven to 350F 175C
In a mixing bowl, combine almond meal, maple syrup, melted coconut oil, vanilla extract, and salt
Mix until a dough forms
Press the dough into a tart pan or pie dish, covering the bottom and sides evenly
Bake in the preheated oven for 10-12 minutes, or until the crust is lightly golden brown
Remove from the oven and let it cool completely before adding your desired filling
