One Pan Cheesy Chicken Broccoli Quinoa
Ingredients:
- 1 cup quinoa, rinsed and drained
- 1 1/2 cups broccoli florets
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken broth
- 2 tablespoons olive oil
Instructions:
Turn on the oven and heat it up to 400F 200C
Warm up the olive oil in a big skillet that can go in the oven over medium-high heat
Season the chicken with salt, pepper, thyme, and paprika after adding it to the pan
Make sure all sides are browned
Add the minced garlic and cook for another one to two minutes, until the garlic smells good
Broccoli, quinoa, and chicken broth should all be mixed in
Bring to a low boil
Place the skillet in an oven that has already been heated and cover it with a lid or foil
Put it in the oven and bake for 20 minutes, or until the chicken and quinoa are done
Open the oven door, take the food out, and add the cheddar and Parmesan cheese
Put it back in the oven for five more minutes, or until the cheese melts and bubbles
Let it cool down for a few minutes before you serve it
If you want, you can add more cheese and thyme as a garnish
