Gingery Carrot Stew with Peanuts and Cilantro
Carrot stew that is warm and tasty, with a kick from the ginger, richness from the coconut milk, and a great crunch from the peanuts. Great for a healthy and cozy meal.
Ingredients:
- 1 lb carrots, peeled and sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup peanuts, crushed
- 4 cups vegetable broth
- 1 can 14 oz coconut milk
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Sesame oil should be used to cook the onion, garlic, and ginger in a large pot until they smell good
After you add the sliced carrots, cook for 5 minutes while stirring every now and then
Add the soy sauce, coconut milk, and vegetable broth
Bring up the temperature
Lower the heat and let the carrots simmer for about 15 to 20 minutes, or until they are soft
Add pepper and salt to taste
Add crushed peanuts and fresh cilantro on top while the food is still hot
